Handbook description

This subject seeks to develop a sound understanding of strategic and operations management in a hotel context. In performing this role it overviews the Australian and international hotel industry; describes the nature of the hotel product and the markets which this product serves; discusses hotel business and marketing strategy options; and examines operational practices associated with the successful conduct of a hotel business. A key aspect of this subject is the development of skills and knowledge in students so they can analyse case-specific data and recommend appropriate management responses.

Subject objectives/outcomes

On successful completion of this subject students should be able to:

  1. Describe the nature and characteristics of the Australian and international hotel industries along with those trends and forces currently impacting upon them.
  2. Describe the general characteristics of the hotel product and tourist/non-tourist markets served by hotels.
  3. Discuss overall business, and associated marketing, strategies employed by hotels.
  4. Identify, and discuss the management of, major operational areas within hotels.
  5. Analyse case specific data and recommend appropriate strategic or operational management responses.

Contribution to graduate profile

Hotel Management is an elective subject for students in the Bachelor of Management in Tourism and draws on the foundation knowledge and skills students have developed in introductory subjects in management and tourism. The subject is designed to provide students with an understanding of the strategic and operational management of hotels. In performing this role it: overviews the Australian and international hotel industry; examines the nature of the hotel product and the markets which this product serves; and discusses strategic growth options and operational practices associated with the successful conduct of a hotel business. A key aspect of this subject is the development of skills and knowledge in students such that they can analyse case specific data and recommend appropriate management responses.

Teaching and learning strategies

Teaching and learning strategies include formal lectures and tutorial sessions. Field visits will also be included. Content for this subject will be supported by UTS Online.

Assessment

Essay (Individual)30%
This addresses objectives 1 and 2.
Case study and Presentation (Group)40%
This addresses objectives 3-5.
Final Examination (Individual)30%
This addresses objectives 1-4.

The examination will be conducted under University examination conditions, hence thoroughly addressing security concerns. The individual essay will follow a field visit to a functioning accommodation establishment and will, therefore be required to describe and interpret current practices. Similarly, the case study will be based on an actual accommodation establishment wand will therefore involve an analysis of current organisational practices and marketing and management strategies, based on information from the organisations concerned.
